All the comfort of a creamy chicken without the cream. Blended onions and light cream cheese do the work instead, and you would never know the difference.

For the chicken

  • 1 kg chicken breast, cubed
  • 1 tbsp ginger garlic paste
  • 1 tbsp cumin powder
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp black pepper
  • 1 tbsp olive oil, for frying
  • salt, to taste

For the sauce

  • 1 tbsp olive oil
  • ½ onion, chopped
  • 120 ml milk
  • 5–6 tbsp light cream cheese
  • 250 ml water
  • 2–3 tbsp mozzarella, grated
  • 2 tbsp tomato paste
  • 1 tbsp cumin powder
  1. Mix the chicken with the ginger garlic paste, cumin, paprika, oregano, black pepper and salt. Leave it to marinate for at least 30 minutes.
  2. Heat the olive oil in a pan and shallow fry the chicken until cooked through and lightly golden at the edges. Set it aside.
  3. In a separate pan, heat the olive oil and fry the chopped onion until soft and golden.
  4. Tip the onion into a blender with the milk and cream cheese. Blend until completely smooth. The onion gives the sauce its body, so blend it properly rather than leaving any texture behind.
  5. Pour the sauce into a pan, add the water, stir and heat it through.
  6. Add the cooked chicken back in, then stir in the mozzarella, tomato paste, cumin and salt.
  7. Cook for 5 to 7 minutes, until the cheese has melted through and the sauce comes together. Taste and adjust the salt before serving.
A note from my kitchenThe trick is the blended onion. It thickens the sauce the way cream would, so you get that richness from something you were putting in the pan anyway.

I cook with better ingredients. Not because anything's off limits, but because I wanted my family to eat the things we love without everything that usually comes with them. So I started rebuilding the recipes I grew up on, taking out what didn't need to be there. Refined sugar went first. You won't find it anywhere in this book.

In my free time, when I'm lucky enough to get some, I like to read and travel to places I haven't been. I turned thirty and started feeling like myself again, which is probably part of why this book exists at all.

Aren't your recipes already free on Instagram?

Some are. A good part of this book has never been posted. And the ones that have are scattered across three years of video, with no measurements written down and no way to find them again on a Tuesday afternoon with the kids shouting in the background.

Is sugar-free baking actually any good?

Most of it isn't, especially when you're starting out. That's why this section took the longest. These are the ones my family asked for again, and nobody at my table has ever asked what's different about them. If anything they like them more. Make one and you'll see what I mean.

I'm not much of a cook. Is this too advanced?

No. The instructions are clear and easy to follow. If you're just starting out, this is honestly a good place to begin, because you're learning with better ingredients from the start rather than unlearning later.

Do I need special ingredients?

No. Dates, nuts, oats, yoghurt, eggs, flour. Almost everything is what you'd pick up on a normal shop. I've deliberately kept the fancy stuff out.

Can I print it?

Yes. Print the whole thing, or just the recipe you're making that day. That's what I do, and it ends up covered in oil and flour by the time I'm finished. Then it goes in the bin and the book is still on my phone, which is exactly why it's an ebook. Everything stays in one place.
